Breaded Pork Chops



Here is a recipe for breaded pork chops (makes 4 to 5 servings)

-  2 to 3 tablespoons olive oil
- 4 cloves crushed garlic
-  1 3/4 cups Italian bread crumbs
-  1 tablespoon dried parsley
-  3 eggs, lightly beatened
-  3 tablespoons milk (or buttermilk)

Preheat oven to 325 degrees.  

Mix eggs and milk in a medium size bowl and set aside.  Mix bread crumbs and parsley together on a large plate and set aside.  

Place olive oil and crushed garlic in a large cast iron skillet on stove top and cook garlic until browned. Remove garlic from skillet and discard or save for another recipe.  Coat each pork chop in eggs/milk mixture and then roll each side of the meat in the breadcrumb/parley mixture.  Place into cast iron skillet and brown on each side.  Place the skillet, with the pork chops, in your preheated oven and cook for approximately 25 minutes.  Let the meat rest for a few minutes and serve.  Enjoy!
