Pancakes


Here is a recipe for pancakes (makes approximately 1 dozen):

-  1 1/2 cups all-purpose flour
-  3 tablespoons granulated sugar
-  3 teaspoons baking powder
-  pinch of salt
-  2 eggs, separated
-  1 1/2 cups milk
-  3 tablespoons vegetable oil
-  1 teaspoon vanilla extract

Place dry ingredients (flour, sugar, baking powder, and salt) in a medium size bowl and mix together.  Make a well in the center and add egg yolks, milk, vegetable oil, and vanilla extract.  Stir to combine well.  In another bowl, whip/beat egg whites, with a stick blender or hand mixer until stiff peaks form.  Fold egg whites into batter.  Spray griddle or pan with cooking spray and scoop pancake batter onto it using a large spoon or ladle and cook until pancakes are golden brown on each side. Top with syrup, fruit, or whatever you like and serve warm.  Enjoy!
