Gingerbread Cake



Here is a recipe for gingerbread cake:

-  2 1/2 cup all-purpose flour
-  1 1/2 teaspoon baking soda
-  2 teaspoons ground cinnamon
-  1 teaspoon ground ginger
-  1/2 teaspoon ground cloves
-  1/2 teaspoon ground nutmeg
-  1/2 teaspoon ground allspice
-  1/2 teaspoon salt
-  1/2 cup softened butter
-  1/4 cup granulated sugar
-  1/4 cup light brown sugar
-  1 egg
-  1 cup unsulphured molasses
-  1/4 cup hot water
-  3/4 cup vegetable oil

Preheat oven to 350 degrees.  Grease a 9 x 9 inch pan.

Mix together flour, baking soda, cinnamon, ginger, cloves, nutmeg, allspice, and salt.  Set aside.

Cream butter, granulated sugar, and light brown sugar.  Mix/beat in egg.  Stir in molasses.  Next combine dry ingredients.  Lastly, add hot water and vegetable oil and combine well.  Pour into greased baking pan.  Bake in the oven for approximately 45 minutes, or until you insert a toothpick in the center and it comes out clean.  Set aside and let cool.  Serve and enjoy!

If you would like to top with frosting, beat together, 1/4 cup softened butter, 4 ounces cream cheese, 1 teaspoon vanilla extract, and 2 cups powdered sugar.  Mix until creamy and spread on top of the cake.  Sprinkle with cinnamon if you would like.
