Waffles



Here is a recipe for waffles (approximately 4 to 6 servings):

-  1/2 cup vegetable oil
-  1 3/4 cups buttermilk
-  2 eggs
-  1/2 teaspoon vanilla extract
-  2 cups cake flour (all-purpose flour works well too)
-  1/2 teaspoon salt
-  1 tablespoon granulated sugar
-  4 teaspoons baking powder

Heat waffle iron.

Mix together vegetable oil, buttermilk, eggs, and vanilla in a medium size bowl.  Add in flour, salt, sugar, and baking powder.  Mix well.  Pour into heated waffle iron and cook until golden brown on both sides.  Serve with syrup and/or fresh fruit.  Enjoy!
