Here is a recipe for cannoli's:
Pizzelle cookie:
- 2 eggs
- 1/2 cup granulated sugar
- 1/3 cup melted butter
- 1 teaspoon pure vanilla (vanilla extract works just fine)
- 1 teaspoon anise extract
- 1 cup and 3 tablespoons all-purpose flour
- 1 1/4 teaspoons baking powder
Filling
- 1 cup ricotta cheese (preferable drained overnight so it is not runny)
- 1/2 cup powdered sugar
- 1/2 teaspoon pure vanilla (vanilla extra works fine)
- 1/8 cup semi sweet chocolate chips
Beat eggs and sugar with a whisk or an electric mixer until fluffy. Stir in the melted margarine, vanilla, anise extracts. Combine the flour and baking powder and mix in. The dough will be sticky.
Preheat your pizzelle iron according to the manufacturer's instructions. Drop batter by rounded spoonfuls onto the iron (approximately the size of 1 tablespoon). Close and cook for about 90 seconds, the light indicator on your iron signals it is ready, or until steam stops coming out of the iron. Carefully remove and roll into a cylinder. Let cool to keep its shape. Store in an airtight container at room temperature if you are making the cookies in advance.
For the filling, mix ricotta cheese, powdered sugar, vanilla, and semi sweet chocolate chips together. Pipe or spoon into pizzelle cookie to make a cannoli. Drizzle with melted chocolate if desire. Serve and Enjoy!
