Here is our Roast Beef Dinner that we had tonight and how it was done:
Roast Beef:
Place a 3 to 4 pound roast beef into a crock pot and salt and pepper both sides. Poor about 1 to 1 1/2 cups beef broth over the meat and slice 1/2 onion and place on top, then cover. Turn crock pot on to low and let it cook for approximately 6 hours or until the meat falls apart when you pull on it with tongs.
Mashed Potatoes:
Mostly peel (leave some of the skin on) 3 medium/large potatoes and then cut. Put into a sauce pan with water and let boil until potatoes are done (soft when you poke with a fork). Poor in about 1/4 to 1/3 cup milk, about 3 tablespoons butter, and 1/2 cup shredded cheese (I used Colby Jack). Mash until your desired consistency (I like it not to be completely whipped, but with some chunks of potatoes not completely mashed).
Biscuits:
I got this recipe from allrecipes.com and the biscuits were really good! It includes:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon cream of tartar
- 2 teaspoons white sugar
- 1/4 teaspoon salt
- 1/2 cup melted butter
- 1 cup milk
Place all dry ingredients (flour, baking powder, cream of tartar, salt, and sugar) into a medium size bowl and mix. Stir in melted butter and milk until batter forms. Drop batter on a lightly sprayed cookie sheet by the tablespoon (makes about 12 biscuits) and cook into your preheated oven (at 450 degrees) for approximately 10 minutes....until light brown.
Beef Gravy:
Spoon out about 1/2 cup of the drippings from the crock pot and put into a saucepan over low heat. Mix in all purpose flour (approximately 2 to 3 tablespoons) until thickened. Remove from heat and spoon over meat and/or potatoes.
Serve dinner to the whole family warm....of course. We had this tonight, a perfect fall day, and the whole family had seconds. I am not one for a roast dinner, but this was yummy good!
