Cinnamon rolls

 
Here is a recipe for cinnamon rolls.  My husband took some to work and they were gone in less then 5 minutes!  They general consent was that they were good and not overally sweet which is a good thing for kids because you don't want to load them up with too much sugar.  Recipe:

-  2 cups all purpose flour
-  4 teaspoons baking powder
-  1/4 teaspoon salt (just a pinch )
-  1/2 cup vegetable shortening 
-  1 cup buttermilk
-  1/3 cup butter (softened)
-  3/4 cup light brown sugar
-  1 and 1/2 tablespoon ground cinnamon

Preheat oven to 425 degrees.  Mix flour, baking powder, salt in large bowl.  Cut in shortening with a large fork until there are coarse crumbles.  Mix in buttermilk to form a dough.  Knead for a couple of minutes.  Place on cutting board sprinkled with flour.  Roll out with a rolling pin to approximately 12 inches by 10 inches.  Spread butter on dough and then sprinkle with brown sugar then ground cinnamon.  Roll dough into a jelly roll, tucking the ends in tightly so none of the inside mixture oozes out while baking.  Cut in 12 equal slices and place into a non stick muffin pan.  If non stick, spray with cooking spray prior to placing the rolls in.  Bake for approximately 15 minutes (until lightly brown). 

Vanilla glaze/icing:

-  1 1/2 tablespoon soften butter
-  pinch of salt
-  1 teaspoon vanilla extract
-  2 cups powdered sugar
-  3 to 4 table spoons milk

Mix all ingredients in small bowl (while cinnamon rolls are baking).  Once mixed thoroughly, spread over the cinnamon rolls while they are warm and serve.  *I also use this glaze recipe all the time for my donuts!

This recipe is really good for a quick breakfast for the family/kids on a school day.  Only takes about 30 to 45 minutes to make the cinnamon rolls and glaze.

This recipe makes 12 cinnamon rolls and cost under $5 to make.  Remember....buy in bulk!  If you want more...double or even triple the recipe!
