Cake Donuts



Here is a recipe for cake donuts (makes approximately 2 dozen):

-  2 cups cake flour
-  1 1/2 cups granulated sugar
-  2 teaspoons baking powder
-  1/2 teaspoon ground nutmeg
-  1/2 teaspoon salt
-  1 teaspoon ground cinnamon
-  2 eggs
-  1 1/4 cups milk
-  2 teaspoon vanilla extract
-  2 tablespoons melted butter

Chocolate Glaze:

-  1 cup semi-sweet chocolate chips
-  2 tablespoons light corn syrup
-  4 tablespoons butter

Preheat oven to 350 degrees and spray donut pans with cooking spray.  In a large bowl mix together cake flour, sugar, baking powder, nutmeg, salt, and cinnamon.  In a small bowl, whisk together eggs, milk, vanilla, and butter.  Pour wet ingredients into flour mixture and stir until well combined.  Pour donut batter into donut pans (don't worry the batter will be runny) until cups are approximately 3/4 full.  Bake for 17 to 20 minutes or until donuts spring back when you poke them.  Let cool for a few minutes in pans and then remove and transfer to a large baking sheet before coating with glaze.

To glaze the donuts, melt semi-sweet chocolate chips, corn syrup, and butter in a double boiler over medium to low heat.  Stir until all ingredients are melted and smooth and spread on to the top of each donut.  Enjoy!
