Here is a recipe for sweet pickles (makes 1-8 ounce jar):
- 1/2 cup cider vinegar
- 1/4 cup sugar
- 3 teaspoons pickling spice
- 1/2 teaspoon non-iodized salt
- 1 cup thinly sliced cumumbers about 1/4 inch thick (small cucumbers preferred)
Combine cider vinegar, sugar, salt, and pickling seasoning in a small saucepan and bring to a boil. Simmer for a few minutes, stirring occasionally, until all sugar and salt is dissolved. Meanwhile, slice cucumbers and place them in a jar. Remove cider/pickling mixture from heat and pour into jar of cucumbers. Let sit to cool for a few minutes. Place lid on jar and store in the refrigerator. Pickles should be ready to eat in a couple of days after refrigeration. Enjoy!
