Here is a recipe for breaded parmesan/garlic chicken (4 servings):
- 1/3 cup olive oil
- 1 garlic clove (crushed)
- 1/2 cup bread crumbs (I made mine from scratch and a little larger crumbs for my liking)
- 1/4 cup grated parmesan cheese
- 4 chicken breasts halves (boneless and skinless)
Preheat oven to 350 degrees.
Heat olive oil and crushed garlic in a small saucepan over medium to low heat. Let simmer for about 5 to 10 minutes to absorb all of the flavors. Remove from heat and let cool. Once oil is cool, soak the chicken breast halves in the oil/garlic for 2 to 3 minutes to coat. While soaking, place bread crumbs and parmesan cheese on a plate or in a small bowl and mix. Then, coat/roll each piece of chicken in the bread crumb/parmesan cheese mixture. Place on a baking sheet lined with foil and cook in the oven for approximately 45 minutes to 1 hour. Remove from oven and serve with a side dish or two. Enjoy!
