Pecan Pie



Here is a recipe for pecan pie (makes 1- 8 or 9 inch pie):

-  1 cup light brown sugar
-  1/4 cup granulated sugar
-  1/2 cup butter, melted
-  2 eggs
-  1 tablespoon all-purpose flour
-  1 1/2 teaspoon milk
-  1 1/4 teaspoon vanilla extract
-  1 cup chopped pecans
-  1 to 1 1/2 cup(s) halved pecans (optional)
-  8 or 9 inch unbaked pie crust (our crust was homemade....you can find the recipe for this on this blog)

Preheat oven to 400 degrees.  Lightly grease pie dish.

In a large bowl, beat or whisk eggs until light and foamy and stir in butter.  Next, mix in light brown sugar, granulated sugar, and flour.  Stir until well blended.  Add milk, vanilla extract, and chopped nuts.  Pour into an unbaked 8 or 9 inch pie shell.  If you wish, add halved pecans on the top of filling for extra flavor and a nice presentation.  Bake in preheated oven at 400 degrees for 10 minutes, then turn down oven temperature to 300 degrees and bake for an additional 45 minutes (or until done).  Serve and Enjoy!

This was my first time making this pie.  If I were to make it again (and I am sure I will), I would probably use an 8 inch pie dish with the ingredients portions just as listed above, or use a 9 inch, but increase the ingredients of the filling by 1 1/2.
