Cheesecake



Here is a recipe for cheesecake (makes 1-9 inch pie):

-  1 prepared graham cracker pie crust
-  16 oz cream cheese (softened)
-  2 eggs
-  3/4 cup granulated sugar
-  2 1/2 teaspoons vanilla extract
-  1/2 teaspoon orange or lemon zest

Preheat oven to 350 degrees.

Beat cream cheese in a medium size bowl.  Add in eggs, sugar, vanilla, and orange or lemon zest.  Beat until light and fluffy.  Pour into prepared graham cracker crust and bake for approximately 25 to 30 minutes (until the top of cream cheese filling slightly browns).  Remove from oven and cool.  Place into the refrigerator to cool further before serving.  Enjoy!

Buttermilk Biscuits


Here is a recipe for buttermilk biscuits (makes approximately 12 to 14):

-  2 cups all-purpose flour
-  1/4 teaspoon salt
-  1 tablespoon baking powder
-  2 teaspoons granulated sugar
-  1/2 teaspoon cream of tartar
-  1/2 cup melted butter
-  1 cup buttermilk
-  dill weed (optional)

Combine flour, salt, baking powder, sugar, and cream of tartar in a medium size bowl.  Make a well in the center and add in buttermilk and melted butter.  Mix until moist.  Using a large spoon, drop batter onto a non-stick cookie sheet (sprinkle the tops with dill weed if you desire) and bake for approximately 8 to 10 minutes.  Remove from oven and serve warm.  Enjoy!
